Thanks to the lovely Milly at Pearls and Poodles, I was able to bake my Mam some pretty little cupcakes for Mothers Day this year.
I hardly ever get the chance to bake, so I was a bit rusty, but I was really happy with how they turned out - and so was my Mam!
Here's how I made the little beauties...
I mixed together 4oz of butter and 4oz caster sugar.
Then added 2 eggs and 6oz of self raising flour with a little pinch of salt.
I divided the mixture into two bowls and took a very small amount of red food colouring and mixed it into one of the bowls.

I then had one half white mix, and one half pink!

I scooped a small amount of white mix into each of my cake cases.

Then added pink, and vice versa, until I had enough of the mixture in the cases.

I baked them in a pre-heated oven at 180 degrees, for approx 12 minutes.

When they came out, they were so pretty, I half thought about not icing them at all!

In the end, after letting the cakes cool down, I decided to make the butter icing.
I took 6oz of butter and 12oz of icing sugar and mixed this until it was really creamy and smooth.
I somehow managed to forget to take photos of the next step which was putting the buttercream into a piping tube and actually icing the cakes. (I must have been concentrating too much!)
I also dyed a bit of the buttercream pink and mixed that in with the white.
I used a couple of different techniques when icing the cakes, and added a bit of edible decorations to the top.

My Mam loved them too, so they were a big success!
I can't wait to make some more and experiment again!
