Another slow cooker recipe I have been making and seriously loving is this spicy sweetcorn and potato soup. I know it's Spring now, and soup may not be what you fancy most days when the weather is warm, but this is such a healthy, low fat, quick to prepare recipe, I'll be eating it all year round.
With this recipe you can tweak the quantities to suit your own tastes if you wish... Add more potatoes if you want something a little heartier or less chilli if you don't like really spicy flavours, it will still work just the same.

Ingredients:
800ml chicken or vegetable stock
6 medium/large potatoes
1 large tin of sweetcorn
1 tblsp chilli flakes

Method:
1. Peel & chop potatoes into chunky sized pieces
2. Add all ingredients to the slow cooker
3. Leave to cook for 6-8 hours
4. Serve!
