If you'd have told me a few years ago that I'd be writing about cooking, I'd have called you a liar, but I have recently fallen a little bit in love with trying new (albeit simple) recipes.
I'm no expert, I mainly use Pinterest for ideas and tweak them a little to suit my awkward tastes, but discovering easy to make, super tasty and usually quite healthy recipes is more fun that I ever expected it to be.

This is one of my most recent recipe finds, and it's definitely one of the most delicious.
It's really simple and only takes around twenty minutes to make... Perfect for a quick tea when you're hungry after a busy day working.

If you're a fan of tangy, sweet flavours - You will love this.
I've been serving it with homemade chips (when I'm feeling a bit naughty), new potatoes or spicy rice and mushrooms.

1lb skin on boneless chicken thighs 
2 cloves of garlic
1 heaped tablespoon of honey
1 tablespoon of soy sauce
1 tablespoon of fresh lime juice
Pinch of salt
Pinch of pepper
Chopped parsley

1. Preheat the oven to 200 degrees.
2. Combine the garlic, honey, soy sauce, lime juice, salt and pepper.
3. Stir in the chicken thighs, ensuring it's fully coated in the mixture.
4. Place the chicken and remaining mixture onto a foil covered baking tray and recover with foil to prevent burning.
5. Bake for approximately 20 minutes until fully cooked
6. Garnish with parsley and serve.
